Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes

I love crock-pot meals. Especially on those days that I'm feeling lazy...like Sundays. I just made this for our family this last Sunday and everyone enjoyed, as always. But then I started to wonder if I had ever shared the recipe on here, and to my surprise I hadn't. What a horrible person I am!
This recipe originally comes from Jenny over at Picky Palate. I don't remember how I ever came across this recipe, but I'm glad I did.

I didn't make the Parmesan Mashed Potatoes, I just made my normal Pioneer Woman mashed potatoes (potatoes, butter, heavy cream, cream cheese, Lawry's Seasoning Salt & Pepper, cheese...yum). No matter what mashed potatoes you use this will be great. But please, try to make them from scratch. :) I promise you it is worth the extra work. Next time you're at the store and you see the little package of instant mashed potatoes, just keep walking! I know they're so easy to mix up, but this meal really needs REAL mashed potatoes & so does your tummy!

Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes
From: Picky PalatePork chops
6 pork chops, 1/2 inch thick
1 packet dry Ranch Dressing Seasoning
10 oz can Cream of Chicken Soup
Parmesan Mashed Potatoes
4 lbs peeled, cubed potatoes
5 Tablespoons real butter
1 Cup fresh grated Parmesan cheese
6 cloves roasted garlic (click for directions how to roast garlic)
1- 1 1/2 Cups warm skim milk (any milk will do, I just happened to use skim)
1 Tablespoon salt, or to taste
1 teaspoon fresh cracked black pepper, or to taste

1. Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours.
2. Place potatoes into a large pot of cold water. Place onto stovetop over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consitency.
3. Scoop mashed potatoes onto serving plates and top with pork chops and soup gravy from crock pot. Enjoy!!

  1. Oh my gosh dont you love this recipe. I have been making it for awhile now. Its the only pork chops I will eat. Yummm
