Ciabatta Bread

I found a recipe for Roast Beef Sandwiches in the May Taste of Home. It called for Ciabatta Bread so I decided to try to make Ciabatta. I found a recipe online and it turned out great! Everyone loved it so much it will definitely become a family favorite!
Step 1: Stir together 1/8 tsp yeast and 2 Tbsp warm water and let stand 5 minutes.

Step 2: Stir together yeast mixture (from step 1), 1/3 cup water, and 1 cup bread flour (I used reg. flour). Stir 4 minutes and then cover. Let stand for 12-24 hours.

Step 3: Mix 1/2 tsp yeast & 2 Tbsp warm milk (140 degrees). Let stand for 5 minutes.

Step 4: Mix milk mixture (from step 3),
sponge (step 1 & 2),
2/3 cup warm water,
1 Tbsp olive oil, and
2 cups flour
at low until just moistened.
Add 1 1/2 tsp salt and mix until smooth and elastic about 8 minutes.
Scrape dough into oiled bowl and cover with plastic. Let rise until doubles (about 1 1/2 hours).

Step 5: Turn onto well floured surface and divide into 2 pieces. Transfer each 1/2 to a piece of parchment paper. Form each into an irregular oval about 9" long. Dimple loaves with fingers and dust tops with flour. Cover with dampened towel. Let rise unto doubled (about 1 1/2 hours).

Step 6: 45 minutes before baking, place stone on the lowest rack of the oven and preheat oven to 425 degrees. When dough is ready to bake, slide dough with parchment onto stone.
(I placed the dough & parchment on a cutting board while rising. When ready, I easily slid the dough onto the baking stone. ) Bake for 20 minutes.
