I got this recipe out of Quick Cooking Sept/Oct 2003. We have made it often over the past few years.
1 lb chicken, cubed
1 garlic clove minced or 1/4 tsp garlic powder
3 Tbsp olive or canola oil, divided
3 Tbsp honey
2 Tbsp soy sauce
1/8 tsp salt
1/8 tsp pepper
1-16 oz. pkg frozen broccoli stir-fry vegetables
2 tsp cornstarch
1 Tbsp cold water
Hot cooked rice
In a large nonstick skillet or wok, stir-fry chicken & garlic in 2 tsp oil. Add the honey, soy sauce, salt & pepper. Cook & stir until chicken is lightly browned & juices run clear. Remove & keep warm.
In the same pan, stir fry the vegetables in remaining oil for 4-5 minutes or until heated through. Return chicken to pan; mix well. Combine cornstarch & cold water until blended; stir into chicken mixture. Bring to a boil; cook & stir for 1 minute or until heated. Serve over rice.
Feel free to substitute your favorite veggies.
